Just when we thought spring was here. I watched the snow melt across the yard with eager anticipation. I watched the gardens' brown soil warming in the bright sunlight in preparation for planting ... and then it happened. Another 8 inches of snow buried us in winter's cold, white blanket! My mountain man spent the day opening driveways with the snowplow, and I spent the day wandering from windows to door trying to figure out what happened. We expected a white Christmas ... not a white Easter. Oh well, I guess I can wait a little longer. Now if I can just keep my sons from calling up and bragging about the warm temperatures in North Carolina & Houston.
Praise ye the Lord. Praise ye the Lord from the heavens: praise him in the heights. Praise ye him, all his angels: praise ye him, all his hosts. Praise ye him, sun and moon: praise him, all ye stars of light.
Praise him, ye heavens of heavens, and ye waters that be above the heavens. Let them praise the name of the Lord; for he commanded, and they were created. He hath also stablished them for ever and ever: he hath made a decree which shall not pass. Praise the Lord from the earth, ye dragons, and all deeps; Fire, and hail; snow, and vapour; stormy wind fulfilling his word: Mountains, and all hills; fruitful trees, and all cedars: Beasts, and all cattle; creeping things, and flying fowl: Kings of the earth, and all people; princes, and all judges of the earth: Both young men, and maidens; old men, and children. Let them praise the name of the Lord: for His name alone is excellent; His glory is above the earth and heaven. Psalm 148:1-13
May the Lord bless you.

In the Craziness ... God's blessings shine
It's been a crazy week or so here at the cabin. We went from several sub-zero days and nights to around 40 degrees last week! Praise God for the sunshine!!! We were all so excited that we were outside on the deck in our shirtsleeves just soaking in the sun's warmth. I'm sure if anyone was watching, we looked absolutely crazy, but we didn't care. Winter has been here so long that we were ready to shed our coats and act a little nuts.
For the last week we've had company and have loved every minute of it. Our dear friend Christina was up from North Carolina, and was suppose to fly back on Friday; but the weather has a way of changing our plans and all flights on the East coast were canceled until today. We were all thrilled that she was able to stay just a bit longer. She got to see a full-fledged snowstorm and even went snow plowing with the Mountain Man. He loved the company and I'm sure that Southern girl had an experience of a lifetime.
I was thinking again today how God uses each member of the family to add something special to the family as a whole. One may add humor, another may add loving comfort, and yet another may add a thirst for knowledge. As I look at our family, I can see how each member has added wonderful gifts and talents that have enhanced all our lives. My Mama has, without realizing, modeled for me not just a love for each member of our little clan, but also an appreciation for each person's unique talents and views. I pray that I too can model this encouragement and appreciation for my own children. Thanks Mama.
May the Lord bless you.

Cold Weather & Warm Biscuits
Today has been another upside-down day. My days & nights are mixed up again. When that happens, I sleep all day & am up all night. There are pros & cons to this, but I've learned to just make the best of it. The temperatures have been horribly cold these past few days with nights dipping down to -20 or so and days not getting above the single digits on the thermometer. I heard that the windchill dropped the temperatures to almost -50 in some areas. This is much too cold for this Southern girl. Springtime has to come soon ... I have seed catalogs! Instead, we have almost two foot of snow piled on our yard. The neighbors are going to think I've gone over the deep end when I get the hoe out and start digging through the snow to find my gardens.
While I wait for spring and more immediately for morning, I think I'll surprise my family with warm buttermilk biscuits for breakfast. (It seem to do my best baking in the middle of the night.) Here's the secret recipe that my family thinks I slave so hard over:
BUTTERMILK BISCUITS
Ingredients=
2 pkg. dry yeast (or 5 tbs. loose yeast)
1/4 c. lukewarm water
2 Tbsp. sugar
1 tsp. salt
1 tsp. soda
3/4 c. oil
2 c. buttermilk
3 tsp. baking powder
5 c. flour
Dissolve yeast in warm water, add sugar to yeast. Add remaining ingredients. Either roll out & cut with biscuit cutter or pinch off amount needed. You can bake immediately or let rise in warm place until biscuits rise to desired size.
Bake 15-20 minutes at 400 degrees.
Dough will keep in refrigerator for up to 1 week.
Have a wonderful day &
May the Lord bless you.
